Nothing like steaming chili and a baked potato to get you through the winter. Only problem: I've never liked spicy chili and I swear every recipe I find is more and more spicy. Soooo, here she is: I've finally perfected my sweet chili recipe. Mmmm mmm! And it's fantastically simple too.
Sweet Chili
Ingredients
- 1/2 lb cooked ground turkey (or beef if you'd rather)
- 1 can kidney beans, rinsed
- 1 can black beans, rinsed
- 1 can refried beans
- 1 can diced tomatoes
- 1 can corn
- 1/2 cup green pepper, diced
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1/2 teaspoon cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- Sprinkle of cayenne pepper
- 1/4 cup brown sugar
- 1-2 cans beef broth
Directions
- Put everything in a slow cooker. Add the broth last, using more or less, depending on how thick or thin you like your chili. Simmer on low for 4 - 5 hours.
- Or, if it's getting to be dinner time you can totally whip this up! Saute the onions and green pepper in a big pot with a tablespoon olive oil, on medium heat until soft. Add everything else to the pot and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.
