And yes, I realize I should have taken a picture of the inside of the cookie, but I was too busy stuffing my face to think about it.
Peanut Butter Cup Stuffed Chocolate Chip Cookies
Ingredients
- 1/2 cup (1 stick) butter, softened
- 1/2 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1/2 tablespoon vanilla extract
- 1 3/4 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup chocolate chips
- 1 bag of Reeses Mini Peanut Butter Cups
Directions
- Preheat oven to 350 degrees F.
- With an electric mixer, cream the butter and sugars until light and fluffy, about 3-5 minutes. Add egg and vanilla and beat until well combined. Meanwhile, in a separate bowl, whisk together the flour, salt, and baking soda. Add to the wet ingredients and beat on low speed until just combined. Add the chocolate chips and stir to combine.
- Cut 12 mini peanut butter cups in half. (I cut mine from side to side, so I'm left with two thin peanut butter cup circles.)
- Scoop out a large spoonful of dough. (About a heaping tablespoon size.) Flatten it a bit and put one half of a Reeses cup in the middle. Surround it with dough, roll into a good ball shape, and place on the greased baking sheet.
- Bake at 350 for about 9 minutes. Enjoy!
Obviously you could use any chocolate chip cookie recipe for this, but after trying a ton of different ones, this is by far my fav.

Ahh! I wish I didn't check your blog today! I'm wanting to lose a little weight before my Hawaii trip and so cookies are not on the meal plan for a while--but now that's all I want!!!! Those look really yummy!
