Let me preface this post by explaining my history with sweet things... I love them. Any and all. However, when I was pregnant with Landon I decided to seriously cut back all candy and baked goodies. Once Landon was born I couldn't eat chocolate (has milk) so it's been a while since I've had any really scrumptious, chocolaty treats. Untilllllll I recently found the recipe for these bad boys.
Oh. my. goodness. You know when you find some sinfully delicious dessert but it's so sweet you can only have a few bites? Not the case with these chocolate crinkle cookies! I'm not kidding you, I can down that whole pan in 5 minutes and not feel one bit sick. It's a miracle. (And I'll refrain from mentioning how many pan-fulls I've eaten.) They are SO easy to make. Amazing right out of the oven. Still chewy the next day. Mmmmmmm. Anyway, go make them...
Crinkles
Ingredients
- 1 cup unsweetened cocoa powder
- 2 cups white sugar
- 1/2 cup vegetable oil
- 4 eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup confectioners' sugar
- In a medium bowl, mix together cocoa, white sugar, and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours.
- Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Roll dough into one inch balls. I like to use a number 50 size scoop. Coat each ball in confectioners' sugar before placing onto prepared cookie sheets.
- Bake in preheated oven for 10 to 12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks to cool.
I love my husband. I love that he works from home and I get to see so much of him. I love how ridiculously random he is. And I love that he is always looking for ways to help me take care of Landon. All in a day's work:

Every time I have a delicious cookie or treat 9 times out of 10 I think, "Becca would probably like this." I just remember your snacks at recess being some goodie you baked up. Those cookies look so good--I think I'll have to try them out sometime.
I bet I would like them too! Yes you will have to try these - of course I think the recipe might need a little tweeking - as is, it's basically sugar mixed with sugar, then rolled in sugar. :)
